Cherish Your Meal With Roasted Chicken Biryani

Ingredients for Roasted Chicken Biryani:

1-Roasted chicken

Grind to smooth paste to get the masala paste:

2 nos-Tomatoes
1/4 cup-Mint
1/4 cup-Coriander leaves
3 nos-Green chillies

Other ingredients:

5 cups-Basmati rice
3 nos-Onions
2 tbsp-Garlic-Ginger paste
3 tbsp-Chilli powder
1 tbsp-Coriander powder
1 tbsp-Garam masala powder
1/2 tsp-Black pepper powder
1/4 tsp-Turmeric powder
6 nos-Cloves
4 nos-Cardamom
1 stick-Cinnamon
2 nos-Bay leaves
2 nos-Mace
1/2 tsp-Aniseed
2 nos-Dried plums with pits
Kewra/ketaki flower or Screw pines - just for taste
1 nos-Chicken stock cube
1 pinch-Food colors or saffron strands
Salt as per need
1 cup-Ghee

Preparation to make Roasted Chicken Biryani:

Soak basmati rice for thirty minutes then cook it in hot boiling water with salt till it's almost done (not completely cooked), strain water with a colander & put the rice beside.
 
In a wok, drop 1/2 cup ghee, once hot, drop every whole masalas such as cloves, Cinnamon, bay leaves, aniseed, kewra, cardamom, mace, & stir until the aroma is gone. Next include well chopped onions & fry until golden brown for making roasted Chicken Biryani tasty.
 
Drop garlic-ginger paste & fry for one minute. Drop chili powder & turmeric powder & stir for 1/2 min. Then add pepper powder, dried plums with pits, coriander powder, ground masala, & garam masala powder & cook until oil separates.
 
Next add Roasted chicken pieces, sufficient salt & stir properly. Just check if final masala is dry & the ghee is floating on top. Now this is done.
 
In a baking tray, grease it with ghee & sprinkle a layer of rice, top it with a layer of masala, and again a layer of rice, then masala, then lastly cover with rice & pour the rest ghee all over it. Pour some colored water if you want your biryani to be colorful.
 
Close with aluminium foil & bake at 200 degrees Celsius/400 degree Fahrenheit for fifteen minutes & it's done.

Garnish it using fried cashews, onions, saffron, etc. Your Roasted Chicken Biryani is ready. Distribute hot with the raita.
